Tzatziki Sauce

So I went to Trader Joe's intending to buy some vanilla flavored yogurt because it's my favorite flavor. Little did I know that the TJ's brand of yogurt is called "French Village" which looks deceivingly similar to "French Vanilla". Let me tell you, it is not. I know because I grabbed the huge container of yogurt, confidently went home, poured it on my oatmeal and immediately did a double take. Did this yogurt go bad already? I JUST bought it! Then I re-examined the label and realized, oh wait...this is whole milk plain yogurt. Whoops. So what better to do than utilize the philosophy "When life gives you lemons, turn them into lemonaide" (and by life I'm referring to both my own stupidity and TJ's false advertising)? I decided to make Tzatziki sauce (Yes I did have to spell check that.) I love this simple sauce that you can use with meat, pita bread, cucumber salad, and a plethora of other things. Good, because I guess I'll be eating it for a while!

Ingredients:
Makes 1 1/2 cups

1 English cucumber, peeled and grated (3/4 cup)
1 teaspoon coarse salt
1 cup plain whole-milk yogurt
1/2 small garlic clove, minced (1/2 teaspoon)
1 teaspoon fresh lemon juice
2 tablespoons finely chopped fresh dill

Directions:
Toss cucumber with salt in a colander, and let drain for 20 minutes. Press lightly to extract excess water, then transfer cucumber to a medium bowl. Stir in yogurt, garlic, lemon juice, and dill. Cover, and refrigerate for 1 hour (or up to 1 day).
