Strawberry & Gruyere Tart

In search of something delicious? Always. Good thing I found this gem of a recipe combining my two favorite things: fruit and cheeeeese. And Gruyere is one of my absolute favorites, especially in pastries. Nom.

Strawberry & Gruyere Tart
serves 4-6

1 sheet frozen puff pastry
2 c shredded Gruyere cheese
2 c sliced strawberries
1 T chopped mint leaves
honey, to taste

Preheat oven to 400F. On a floured surface, roll the puff pastry into a 16”x10” rectangle, folding over uneven edges. Place on a baking sheet. Lightly score dough 1”in from the edges, making a rectangle. With a fork, pierce dough all over, inside the rectangle. Transfer to oven and bake 10 minutes, until golden brown.

Remove pastry, leaving oven on, and sprinkle with Gruyere. Top with sliced strawberries and mint. Drizzle with honey, to taste. Transfer to oven, and bake 10 minutes, until strawberries just begin to soften.
